Sugar-Free Cupcakes Recipe

INGREDIENTS:
125g Butter
125g Self raising Flour
2 eggs
10-15 Dates
1tsp Honey
2-3 Pieces of Crystallized Ginger
1tsp Ground Cinnamon

METHOD:
1. Preheat the oven to 180°C or Gas mark 6. Mix the butter until smooth and pale.
2. Whisk the eggs in a separate bowl and gradually add to the butter. 
3. Slowly fold in the flour, then add all the remaining ingredients and mix.
4. Spoon the mixture into your cupcake cases and put into the oven for 15-20 mins. Until golden brown.

MAKES 12 CUPCAKES - GREAT FOR PEOPLE WITH DIABETES
